Cuban Burgers with Avocado, Tomato, Onion Salad

I thought I would give another recipe a try from my favourite blog: Closet Cooking. His recipe for cuban burgers looked enticing, but I changed it up a bit to put my own spin on it! I love how flavourful it turned out, and was happy to serve it for dinner when my good friend Jacqueline was over on Monday night after Zumba class.


I paired it with an Avocado, Tomato and Onion salad.

Grill time:  10-12 mins

Total Time: 35 mins

Serves 3


Ingredients
Cuban Burgers - Patties
1lb ground pork
1/2 cup fresh cilantro, chopped
1 tsp garlic, minced
1 tsp lime juice
1/4 tsp cumin powder
1/4 tsp curry powder
1/4 tsp oregano
1 egg white
1/2 cup bread crumbs
1/2 tsp dijon mustard


To complete burgers
4 buns
4 slices swiss cheese
4 slices ham
8 slices dill pickle
4 tbsp mayonnaise
2 tsp dijon mustard
1 tsp roasted garlic powder
1/2 tsp honey


Avocado, Tomato and Onion Salad
2 ripe avocados, diced
12 campari tomatoes, sliced
1/2 sweet onion, thinly sliced
1/4 cup fresh parsley, chopped
1/2 tsp garlic, minced
1.5 tbsp extra virgin olive oil
1 tbsp white balsamic vinegar
1/2 tsp lime juice


Directions
  1. In a large bowl combine ingredients to make patties. Once well mixed, separate into four equal parts and form four patties.
  2. Grill burgers. I used my handy Breville grill which cooks both sides at once (about 10 minutes), otherwise 5 minutes or so per side.
  3. While burgers are cooking mix together mayonnaise, mustard, honey and garlic and spread on buns. Put 1 slice of each ham, swiss cheese and 2 slices of dill pickle. 
  4. Lay out tomatoes in a single layer on each plate, top with avocado, onions and sprinkle with parsley. 
  5. In a dressing bottle mix garlic, oil, vinegar and lime juice. Shake to mix. 
  6. Once burgers are ready, drizzle dressing over salad.
